I'm playing through the Assassin's Creed Chronicles Trilogy Pack on PS5 right now. It runs beautifully at a smooth 60 and I've had no issues. Considering the fan outcry for a 60fps patch for Odyssey and Origins and that Ubisoft actually listened and patched Odyssey, I think you might be better off waiting for an Origins patch.

Origins is a really great game, good looking, with lots of exploration and an interesting story. The only thing that would be a problem for you is that just to finish the main missions you have to throw in a lot of time (I took around 60/70 h, but I also did a lot of secondary and exploration stuff in that time, to 100% it I needed more than 95 h) so it might be too long and boring for you.
